This recipe was created by @damn_delicious and modified to be IC safe by Kerri Cole (@icfood4U). You can add shrimp, chicken, or any protein of choice. Also, be sure to buy the block of cream cheese. Cream cheese that come in tubs often have additives that are not bladder friendly!
Ingredients:
8 ounces fettuccine (or sub for zucchini noodles) 2 tablespoons unsalted butter 2 tablespoons all-purpose flour 1 1/4 cups 2% milk, or more, as needed 2 tablespoons heavy cream 1/4 teaspoon garlic powder 2 ounces cream cheese 1/4 cup Parmesan cheese Kosher salt and freshly ground black pepper, to taste (if tolerated)
Directions: 1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. 2. Melt butter in the same saucepan over medium heat.
3. Whisk in flour until lightly browned, about 1 minute.
4. Gradually whisk in milk, and cook, whisking constantly, until incorporated, about 1-2 minutes.
5. Stir in heavy cream and garlic until slightly thickened, about 1 minute. 6. Stir in cheeses until melted, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with Kosher salt to taste. 7. Stir in pasta and gently toss to combine.
