Chicken Casserole

This is a recipe from an IC Safe Cookbook.


3 cups cooked chicken (cut up)

1 can cream of chicken soup (IC friendly or could use cream of mushroom)

1 1/2 cup cooked rice

1 cup chopped celery

2 small packages of slivered almonds

1 cup chicken broth (IC friendly)

2 hard-boiled eggs chopped

2 cups corn flakes (IC friendly)


Mix all ingredients in a large casserole. Cover with 2 cups of crushed cornflakes (make sure IC friendly). Bake in 350 degrees F oven for 1 hour or until bubbling around the edges.
