2 cups flour
1/2 cup + 1 tsp granulated sugar
1 1/2 tsp baking powder
3/4 tsp ground cinnamon (if can tolerate)
1/2 tsp salt
2 tbsp cold butter cut into small pieces
2/3 cup half and half cream
1/4 cup IC friendly applesauce
1 Gala apple cored and chopped (1 1/2 cups)
2/3 cup confectioners sugar
Preheat over 400F. Grease baking sheet. In bowl, combine flour, 1/2 cup granulated sugar, baking powder, cinnamon and salt. On medium speed, beat in butter until mixture resembles coarse meal. Beat in cream and applesauce until blended (2 minutes). Stir in apple. Drop batter by 1/4 cup fulls onto baking sheet 2 inches apart. Sprinkle top with remaining 1 tsp granulated sugar. Bake 10-12 minutes until golden brown. Cool. Combine confectioners sugar and 1 tbsp water, drizzle over scones.
