Pumpkin Bread

This recipe is from an IC safe cookbook.


1 1/2 cups flour

1/2 tsp of salt

1 cup sugar

1 tsp baking soda

1 cup pumpkin puree

1/2 cup olive oil

2 eggs, beaten

1/4 cup water

1/2 tsp nutmeg (it's on the "may be okay" column; I seem to tolerate it)

1/2 tsp cinnamon

1/2 tsp allspice

1/2 cup chopped walnuts (I eliminate these)


Preheat oven to 350F. Sift together the flour, salt, sugar, and baking soda. Mix the pumpkin, oil, eggs, 1/4 cup of water, and spices together, then combine with the dry ingredients. Stir in the nuts, unless you decide to leave them out! Pour into a well-buttered 9" x 5" x 3" inch loaf pan. Bake 50-60 minutes until a toothpick comes out clean. Let cook on a rack. Makes one loaf.
