Craving Mexican food? Try these grilled chicken fajitas! Recipe created by Kerri Cole (@icfood4u). Almond flour tortillas were used for the tacos as well as coconut flour tortillas chips.
Makes 8 fajitas
✨Chicken 1 pound of chicken, sliced into long, thin strips 1 Tbsp olive oil 1 tsp cumin (omit if not tolerated) 1/2 tsp garlic powder 1/4 tsp oregano 1/2 tsp sea salt, or more to taste
✨Pepper/Onion Mixture 1 red bell pepper, sliced into thin strips 1/2 sweet onion, sliced into thin strips (omit if not tolerated) 1 tsp olive oil Salt, to taste
✨Fajita Toppings Tortillas (I like Siete) Mild cheddar cheese, shredded Cilantro (if tolerated) Plain Greek yogurt (if tolerated) Avocado, smashed (add sea salt and a dash of garlic powder)
Directions: 1. Mix all of the chicken ingredients together, and grill in a grill basket until cooked. 2. Sauté peppers and onions in olive oil on medium until cooked (about 5-10 minutes). Add salt to taste. 3. Serve chicken in tortillas and top with cheese, cilantro, avocado and Greek yogurt.
