Ingredients: 2 cups chicken, shredded or chopped 1 stalk of celery, chopped small 1/2 cup blueberries 1/4’of a sweet red bell pepper, chopped 1/2 cup cottage cheese 1/4 cup plain greek yogurt 1/2 tsp kosher salt 1 Tablespoon brown sugar, or to taste slivered almonds (optional) Directions: 1. Combine all ingredients in a bowl.
2. Serve on toasted bread, pita, or a wrap.
*For a lower carb option, serve wrapped in lettuce or on a bed of greens.
