Cucumber and Peach Salad

This recipe is from an IC Safe Cookbook


1 large cucumber, peeled & chopped

2 ripe peaches, chopped (if can tolerate)

1 tbsp fresh mint, minced

1 tbsp fresh basil, minced

2 tbsp pure peach or pear juice (or 1 tbsp of each)


Mix all ingredients in a large bowl and chill in the refrigerator for 30 minutes.

*You could also try this salad with my Maple Cream salad dressing. Simply Pear salad dressing or Mock Red Wine salad dressing instead of pear/peach juice.
