Egg Roll in a Bowl

Ingredients:

✨Sauce: 1/4 cup coconut aminos 1 tsp toasted sesame oil 2 tsp light brown sugar (or more to taste, if you like) ✨Meat Mixture: olive oil spray 1 lb ground turkey 1/4 cup chopped green cabbage 2 garlic cloves, crushed 1 carrot, shredded 1 cup baby bok choy, chopped 1 cup shiitake mushrooms, chopped 1/2 cup carrots, shredded Directions:

1. Mix sauce ingredients.

2. Brown turkey.

3. Once turkey is fully cooked, add garlic, cabbage, bok choy, mushrooms, and carrots.

4. Cook for 5 minutes.

5. Add sauce and cook for an additional 10 minutes.

6. Add salt to taste. 7. Serve over rice, cauliflower rice, or quinoa.
