Pear Bread

This recipe is from an IC safe cookbook.


3 cups all-purpose flour

1 tsp baking soda

1/4 tsp baking powder

1 tsp salt

1 tbsp cinnamon (if can tolerate)

3/4 cup vegetable oil

3 eggs, slightly beaten

2 cups sugar

2 cups pears, peeled and grated

1 cup nuts, chopped

2 tsp vanilla


Combine flour, soda, baking powder, salt and cinnamon in a large bowl. Make a well in the center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla. Add to dry ingredients, stirring just until moistened. Spoon mixture into 2 greased 8 1/2" x 4 1/2" x 3" loaf pans. Bake at 325 F for 1 hour and 10 minutes or until done. Cool 10 minutes before removing from pans. Yields: 2 loaves
