Ingredients
Shrimp
2 cups rice, cooked
3 tbsp butter
1 1/2 tsp garlic powder
6 large shrimp
6 scallops
In a frying pan melt butter and add garlic powder. Add the shrimp and scallops and fry turning once until golden brown. Set aside.
Vegetables
3 tbsp butter
1 tsp garlic powder
1/2 cup of peppers (I use red/yellow/orange)
1/2 cup chopped onions (if can tolerate)
1/2 cup sliced mushrooms
1/4 cup sliced carrots
1/2 cup chopped broccoli
1/2 cup chopped cauliflower
In a frying pan, melt butter and add garlic. Add peppers, onions, mushrooms, carrots, broccoli and cauliflower. Cook until vegetables are tender. Add shrimp, scallops and rice. Mix well and heat well. Pour into serving platter or plate. In the same frying pan melt another 3 tbsp butter and 1 tsp garlic powder. Pour over dish. Serve and enjoy.
