6 large potatoes (pealed and cut into cubes)
2 - 3 Tablespoons of butter
2 - 3 Tablespoons of Olive Oil
1 - 2 cloves of fresh garlic (sliced or chopped)
A few sprigs of fresh parsley (Chopped)
2 large organic chicken breasts (grilled and cubed)
1) In a large skillet, put the potatoes, butter, olive oil, and fresh garlic over medium heat and cover. Stir occasionally to brown the potatoes. Cook until they are tender (approximately 30 minutes depending on how big they are cut)
2) While potatoes cook in skillet, grill chicken separately (if not already cooked) and cube it. Put to the side to add later.
3) When potatoes are almost done cooking, ad parsley and grilled chicken to skillet, stir and cover. Cook for about 10 minutes.
