Light Quinoa Salad

Ingredients:

3 cups cooked quinoa 1/2 Red pepper, chopped 1 cucumber, diced 1/2 yellow pepper, chopped 1/4 cup basil, chopped 1/4 - 1/2 cup feta cheese 2 Tbsp olive oil Sea salt, to taste Directions:

1. Add quinoa, veggies, feta and basil to a bowl and mix.

2. Drizzle with olive oil and add salt to taste.

3. Refrigerate for 1 hour and enjoy.
